Ingredients
- 1 rotisserie chicken (shredded)
- 3-4 carrots (chopped)
- 3-4 celery stalks (chopped)
- 1/2 onion (chopped)
- 1 tbsp. minced garlic
- 6-8 cups of chicken broth
- 12 oz. egg noodles
- Olive oil
- Salt, pepper, and thyme
Directions
- Drizzle olive oil in a deep pot on medium heat
- Saute the garlic and onion
- Add in the celery, carrots, and broth
- Cover the pot and cook until the vegetables are tender
- Add in the shredded chicken, noodles, salt, pepper, and thyme
- Cover and cook for 6-7 minutes, until noodles are cooked through
