Ingredients
- 2 large eggs
- 1 tbsp. minced garlic
- 2 tbsp. chopped parsley
- 3 chicken breasts (cut in half)
- 1 cup Panko breadcrumbs
- ½ cup Italian breadcrumbs
- 1 tsp. onion OR garlic powder
- ½ cup of grated parmesan cheese
- 1 (23 oz.) jar of marinara sauce
- 8 oz. mozzarella (sliced)
- Salt and pepper
Directions
- Preheat oven to 430°
- Whisk together eggs, minced garlic, salt, and pepper
- Mix bread crumbs, parmesan, and garlic powder in a separate bowl
- Add chicken into the egg mixture to coat it
- Dip chicken into breadcrumb mixture to coat
- Heat oil in a skillet over medium-high heat and fry chicken until crispy (about 4-5 minutes each side)
- Add a layer of marinara sauce to a baking dish
- Place chicken in baking dish, top with mozzarella and the rest of the sauce
- Sprinkle parmesan on top and bake for 15-20 minutes
