- 1 cup butter
- 1 2/3 cup of sugar
- 2 eggs
- 2 tsp. vanilla extract
- 3 1/2 cups of flour
- 1 tsp. baking soda
- 3/4 tsp. salt
- 2 1/4 tsp. baking powder
- 6 tbsp. butter - softened
- 3/4 cup of brown sugar
- 1 1/2 tbsp. of cinnamon
- 1/3 cup of sugar
- 1 1/2 tbsp. cinnamon

- Make the filling first: in a large bowl, add 6 tbsp. butter and beat until creamy and smooth.
- Add 3/4 cup of brown sugar and 1 1/2 tbsp. cinnamon, beat well until completely smooth
- Line a baking sheet with parchment paper, make small balls of filling and place on baking sheet
- Put the balls of filling in the freezer for about 20 min.
- Preheat oven to 350° and line another baking sheet with parchment paper
- Make the dough: in a large bowl, beat 1 cup of butter until smooth
- Add in the sugar and combine until there are no chunks
- Add 2 eggs and teh vanilla, stir
- Add in the flour, baking soda, salt, and baking powder
- Slowly add in the balls of cinnamon filling and fold to combine
- Form the dough balls
- Roll the cookies in sugar-cinnamon mixture
- Bake for 11-12 min.
* Freezer instructions: leftover dough can be stored in the freezer for about 3 months. No need to thaw the dough before cooking, just add a few minutes to the bake time
