Cinnamon Roll Cookies

  1. Make the filling first: in a large bowl, add 6 tbsp. butter and beat until creamy and smooth.
  2. Add 3/4 cup of brown sugar and 1 1/2 tbsp. cinnamon, beat well until completely smooth
  3. Line a baking sheet with parchment paper, make small balls of filling and place on baking sheet
  4. Put the balls of filling in the freezer for about 20 min.
  5. Preheat oven to 350° and line another baking sheet with parchment paper
  6. Make the dough: in a large bowl, beat 1 cup of butter until smooth
  7. Add in the sugar and combine until there are no chunks
  8. Add 2 eggs and teh vanilla, stir
  9. Add in the flour, baking soda, salt, and baking powder
  10. Slowly add in the balls of cinnamon filling and fold to combine
  11. Form the dough balls
  12. Roll the cookies in sugar-cinnamon mixture
  13. Bake for 11-12 min.

  14. * Freezer instructions: leftover dough can be stored in the freezer for about 3 months. No need to thaw the dough before cooking, just add a few minutes to the bake time
