Italian Pasta Fagioli Soup
Ingredients
- 1 tbsp. olive oil
- 1 lb. mild or spicy italian sausage
- 1 large onion - diced
- 3 medium carrots - diced
- 2 celery ribs - diced
- 4 cloves of garlic - minced
- 5 cups chicken broth
- 14.5 oz. can of cannellini beans - rinsed and drained
- 14.5 oz. can of red kidney beans - rinsed and drained
- 15 oz. can of diced tomatoes - with their juices
- 16 oz. tomato sauce
- Salt and pepper
- 2 bay leaves
- 1 tbsp. rosemary
- 1 tbsp. thyme
- 1 cup ditalini pasta
- Parmesan
- Crushed red pepper - optional
Directions
- Heat olive oil in a large pot over medium-high heat
- Add sausage and cook for 4-5 min.
- Add onion, carrot, celery, thyme, rosemary then cook for about 6 min.
- Stir in the garlic and cook for about 1 min.
- Add broth, beans, diced tomatoes, tomato sauce, salt, pepper, and bay leaves. Increase heat to high and bring to a boil then simmer for 5 min.
- Add in pasta and cook until done
- Season with salt and pepper to taste. Add in parmesan and red pepper
