Ingredients
- 1/2 cup dry white wine
- 2 tbsp. lemon juice
- 2 tsp. very finely minced shallots
- 2 tbsp. heavy cream
- 8 oz. butter, cut into 1 in. cubes
- Cayenne pepper (just a pinch)
- Salt and pepper
Directions
- In a small saucepan, reduce the wine, lemon juice, and shallots until syrupy
- Add cream and let simmer, then add butter chunk by chunk, whisking continuously
- Season with cayenner pepper, salt, and pepper
