  1. In a pot, heat olive oil on medium-high heat. Add onion, celery, and carrots and cook for 15 min.
  2. Add salt, pepper, wine, and tomato paste
  3. Add lentils and stir to combine
  4. Add 6 cups of broth and reduce heat, cover with lid
  5. Let lentils simmer for about 40 minutes, stir occasionally
  6. Add more salt and pepper to taste, top with parmesan
