Ingredients
- 3-4 tbsp. olive oil
- 1 medium onion - diced
- 2 celery stalks - diced
- 2 medium carrots - diced
- 2-3 cloves of garlic - minced
- 1/4 cup of dry white wine
- 3 tbsp. tomato paste
- 1 1/4 cup of lentils (green are best)
- 6-7 cups of chicken broth
- Salt and pepper to taste
Directions
- In a pot, heat olive oil on medium-high heat. Add onion, celery, and carrots and cook for 15 min.
- Add salt, pepper, wine, and tomato paste
- Add lentils and stir to combine
- Add 6 cups of broth and reduce heat, cover with lid
- Let lentils simmer for about 40 minutes, stir occasionally
- Add more salt and pepper to taste, top with parmesan
