Ingredients
- 1 lb. ground beef
- 0.75 oz. taco seasoning
- ¼ cup water
- Green onions (chopped, optional)
- Chopped tomatoes (optional)
- ½ cup corn
- 8 oz. salsa
- 6 (6 inch) tortillas
- 2 (4 oz.) cans green chiles
- ½ lb. Mexican shredded cheese
- 5 oz. enchilada sauce
Directions
- Preheat oven to 350°
- Cook ground beef
- Add in taco seasoning, water, and diced chiles
- Stir in salsa and corn until well-combined
- Spray a 9” × 9” baking pan with non-stick spray
- Place tortillas on the bottom of the pan
- Begin layering the lasagna: ground beef mixture, cheese, enchilada sauce (repeat)
- Top the last layer with cheese then cover with foil and bake for 45 minutes at 350°
- After 45 minutes, remove the foil and bake for 10 more minutes
- Top with tomatoes and green onions
