Ingredients
- 3 tbsp. olive oil
- 1/2 yellow onion
- 3 garlic cloves (minced)
- 1 lb. italian sausage
- 1 package gnocchi
- 1 (15 oz.) can diced tomatoes
- 1/2 cup shredded mozzarella
- 4 cups spinach
- 2-4 cups chicken broth
- Salt and pepper
- Dried oregano
- Dried basil
Directions
- Saute onion and garlic in oil
- Cook sausage in same pan until browned
- Add gnocchi, tomato, and chicken broth and cook until gnocchi is done
- Add spinach, mozzarella, oregano, and basil
