Ingredients
- 1 lb. ground sweet or hot sausage
- 1 medium onion (chopped)
- 2 garlic cloves (minced)
- 1 tbsp. Italian seasoning
- 4 cups beef stock
- 1 (28 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 2 zucchinis (diced)
- 1 carrot (chopped)
- 1 bell pepper (chopped)
- ½ cup red wine
- 16 oz. frozen cheese tortellini
Directions
- Cook sausage completely and ground it up, transfer to a bowl
- Add onion to a large pot and cook for 3 minutes
- Add garlic and herbs, cook for 1 minute
- Add beef stock and bring to a boil, then reduce heat to medium-low
- Add tomatoes, tomato sauce, zucchini, carrot, bell pepper, and wine
- Simmer until vegetables are tender, stir in sausage
- Season to taste with salt and pepper
- Cook tortellini according to the package and drain
- Put soup in bowls, then top with tortellini (keep tortellini separate so it doesn’t get soggy)
