Ingredients
- 1 onion, diced
- Olive oil
- Salt and pepper
- Red pepper flakes
- Oregano
- Thyme
- 2 cloves of garlic, minced
- 4.5 oz. tomato paste
- 1/3 cup vodka
- 1 cup heavy cream
- 1 lb. rigatoni or penne
- At least 1/2 cup parmesan
- 2 tbsp. butter
Directions
- Heat large pot of water to cook, while that heats up, start on the sauce
- Cook onion in olive oil over medium heat. Add pepper, red pepper flakes, oregano, and thyme and cook 1-2 more minutes
- Add in garlic, cook 1 minute
- Add in tomato paste and cook over medium heat for 2-3 minutes, stirring continuously
- Add vodka and let simmer, then add heavy cream
- Turn off the heat while the cream simmers
- Once pasta is almost done (2 min before done), drain and reserve some pasta water
- Add the pasta, butter, and parmesan to the sauce and mix
- Add pasta water and let simmer for the last couple minutes of its cook time
