Vodka Pasta

  1. Heat large pot of water to cook, while that heats up, start on the sauce
  2. Cook onion in olive oil over medium heat. Add pepper, red pepper flakes, oregano, and thyme and cook 1-2 more minutes
  3. Add in garlic, cook 1 minute
  4. Add in tomato paste and cook over medium heat for 2-3 minutes, stirring continuously
  5. Add vodka and let simmer, then add heavy cream
  6. Turn off the heat while the cream simmers
  7. Once pasta is almost done (2 min before done), drain and reserve some pasta water
  8. Add the pasta, butter, and parmesan to the sauce and mix
  9. Add pasta water and let simmer for the last couple minutes of its cook time
