Ingredients
- 1 cup corn
- 2 carrots, julienned
- 4 oz. green beans, julienned
- 2 tbsp. finely chopped shallots
- 1 tbsp. olive oil
- 2 tbsp. chopped parsley
- Salt and pepper
- 1 tbsp. butter, cut into cubes
- 2 chicken breast halves, each about 4-6 oz. and pounded 1/2 thick
Directions
- Preheat oven to 350°F
- In a bowl, toss together the corn, carrots, green beans, shallot, olive oil, and half ot he parsley. Season with salt and pepper
- Place 2 sheets of parchment paper (12" x 16") on counter
- Place half of the vegetable mixture in the center of each sheet and top each with a chicken breast
- Season chicken with salt, pepper, and remaining parsley. Place the butter cubes on top
- Make 1/2" folds around the parchment paper to create a tight seal, twist the ends
- Place packets on a baking tray and cook in the oven for 20 minutes, or until chicken is cooked through
- Optional: serve with lemon beurre blanc sauce
