Chicken en Papillote

  1. Preheat oven to 350°F
  2. In a bowl, toss together the corn, carrots, green beans, shallot, olive oil, and half ot he parsley. Season with salt and pepper
  3. Place 2 sheets of parchment paper (12" x 16") on counter
  4. Place half of the vegetable mixture in the center of each sheet and top each with a chicken breast
  5. Season chicken with salt, pepper, and remaining parsley. Place the butter cubes on top
  6. Make 1/2" folds around the parchment paper to create a tight seal, twist the ends
  7. Place packets on a baking tray and cook in the oven for 20 minutes, or until chicken is cooked through
  8. Optional: serve with lemon beurre blanc sauce
